Signatory Mannochmore 2012

Signatory Vintage is an independent bottling company, playing an important role in the whisky business. In this case, they have purchased a cask from the Mannochmore Distillery and then carefully chosen when to bottle and release the whisky. Distilled in 2012, this single malt spent 11 years aging within a small batch of first-fill Oloroso Sherry Butts and part of their 100 Proof Edition series. It’s also bottled at 57.1% abv, free from chill-filtration for their thirteenth edition. The colour alone will certainly grab your attention. It offers a wonderfully smooth and pleasant mix of dried figs, purple plum, dried cherries and citrus peel with a hint of oaky vanilla on a spicy, nutty finish. Don’t be afraid to cut the abv with a drop of water to release the goodness!
