Signatory Vintage is an independent bottling company, playing an important role in the whisky business. In this case, they have purchased one cask from the Cambus distillery and then carefully chosen when to bottle and release the whisky. Distilled in 1991, this single grain vintage whisky was matured in a refill Oloroso Sherry cask. The whisky was then bottled in January 2023, totalling 31 years and part of their Cask Strength Collection. To this day, the grain used for this whisky remains a secret but my guess is wheat. The Cambus distillery dates back to the early 1800s and is one of the Lowland grain distilleries. It was officially closed in 1993, so finding an independent bottling of one of their whiskies is extremely lucky and absolutely delicious.
