As far back as the 16th century, the monks of Saint Martin cited the Servin family as vineyard owners in Chablis. Since then, successive generations have perpetuated the family's tradition and ever-evolving expertise as farmers and winemakers. It is because of this that they own great parcels on prime exposures. Chablis Grand Cru ‘Les Preuses’ is famous for its minerality and takes its name from the word ‘pierre’ (stone). But unlike the rest of the wines from Chablis, Grand Cru will always spend some time aging in French Oak. This example is pure gold, showcasing a burst of dried orchard fruit, lemon zest, flint, honey and almond with a discreet hint of woody notes on the finish. It’s also a wine that could easily age for a decade or more.
