Signatory Caol ILa 2012 100 Proof Edition #70

Signatory Vintage is an independent bottling company, playing an important role in the whisky business. In this case, they have purchased a cask from the Caol ILa Distillery and then carefully chosen when to bottle and release the whisky. Distilled in 2012, this single malt spent 13 years aging and was finished in a mix of first fill and refill Oloroso Sherry Casks, before bottling. This release is also part of their 100 Proof Edition, sitting at 57.1% abv. It’s an incredibly smooth and nicely peated single malt, offering notes of dark berries, cracked pepper, cocoa powder and sea spray, with salty sherry notes.
